Quick and Easy Low Fat Breakfast Wrap
INGREDIENTS:
- 1 whole egg*
- 2 egg whites*
- 1 low fat flour tortilla
- 1 tbsp reduced fat shredded cheese
PREPARATION:
* You can use 1/2 cup egg substitute if you prefer
Try adding a spoonful of salsa, or add sauteed peppers, onions and mushrooms.

Lower Fat Brunch Egg Casserole Recipe
Ingredients:
2 cups plain croutons
1 cup shredded low fat Cheddar cheese
1 cup egg substitute
2 cups skim milk
1 teaspoon prepared mustard
Dash pepper
4 slices turkey bacon -- cooked and crumbled
With cooking spray, grease a 2-quart square baking dish. Combine croutons and cheese. Set aside. In a medium mixing bowl, combine eggs, milk, mustard, and pepper; beat until combined. Pour egg mixture over croutons. Sprinkle with the crumbled bacon. Bake, uncovered, in a 325F degree oven about 45 minutes or until knife inserted off-center comes out clean. Let stand 10 minutes before serving.

Low Fat Herbed Spinach Omelet
INGREDIENTS:
- 1 whole egg*
- 2 egg whites*
- 1 tablespoon skim milk
- 1/2 tsp dried mixed herbs
- pepper to taste
- 3/4 cup chopped fresh baby spinach
- 1 tablespoon reduced-fat shredded sharp cheddar or grated parmesan cheese
PREPARATION:
Combine egg and egg whites, milk and herbs in a small bowl. Coat a small nonstick skillet with cooking spray. Heat the skillet on medium to low heat. Add chopped spinach. As it wilts, pour egg white mixture over the spinach and allow to set around the edges. As the edges set, lift them gently with a spatula and tip the skillet to allow remaining liquid underneath. When the egg whites are set, sprinkle the cheese on top, then fold the omelet in half. Serve immediately.
*You can use 1/2 cup egg substitute, or 3 egg whites
Try adding a spoonful of salsa on top of the omelet, or add sauteed peppers, onions and mushrooms in the omelet.
Enjoy with a slice or 2 of whole grain toast.
